Summer pasta with tomatoes and mozzarella - Pasta estiva con pomodorini e mozzarella



Ingredienti per 2 persone: 

500 grammi di pomodorini Piccadilly(o ciliegini se non li trovate,ma i Piccadilly sono + dolci)
200 grammi di pasta
una mozzarella da 125 grammi,o un formaggio tipo latteria o simile.
olio extravergine d'oliva,aglio,basilico,sale.
un pò di parmigiano grattuggiato(facoltativo) 

Ingredients for 2 persons:

500 grams Piccadilly tomatoes(cherry ones will do anyway)
200 grams dry pasta
125 grams of Mozzarella,or a cheese like Latteria
extra-virgin olive oil,garlic,basil,salt
a bit of grated parmesan(if you like) 

Fate dorare l'aglio tritato in un pochino d'olio in un padellone saltapasta,potete metterne da 1 a 3 spicchi a seconda dei vostri gusti e della loro dimensione;tagliuzzate finemente i pomodorini ed uniteli all'aglio, salate subito per aiutare i pomodori ad espellere il loro liquido,tenendovi bassi perchè poi il tutto si restringerà e non volete trovarvi col sugo salato ;).

Fry the garlic(1 to 3 cloves,depending on your tastes and their size) in a bit of oil in a big pan 'til golden,add the finely cut tomatoes and add salt at once(not too much!It will concentrate, as the sauce dries),so that tomatoes will throw out their liquid faster.

Quando avrete finito di mettere su il sugo,mettete a bollire l'acqua salata e cuocete la pasta,nel frattempo fatelo restringere a fuoco medio mescolando,tagliuzzate a piccoli pezzetti la mozzarella e spezzettate con le mani il basilico.

When you're done preparing the sauce,while you make it slowly dry stirring regularly,fill a pot with water,make it boil,add salt and cook the pasta,cut in tiny bits the mozzarella and break basil leaves to small pieces with your hands.

Scolata la pasta,buttatela nel padellone del sugo,metteteci ancora un pò d'olio a crudo e il basilico,date una prima mescolata,spegnete il fuoco e metteteci la mozzarella,rimescolate velocemente e coprite con un coperchio per 1-2 minuti,in modo che la mozzarella si sciolga senza riempirvi il piatto di fili.Se avete ospiti per la quiete di tutti potreste preferire l'utilizzo del latteria,che "fila"meno ed è + pratico in questo senso.
Scoperchiate e impiattate,aggiungendo se volete un pò di parmigiano grattuggiato.

When the pasta is ready,drain it from water and throw it in the pan with the (now cooked)tomatoes,add some oil,the basil and stir well.Close the fire below the pan,add mozzarella,stir well quickly and cover the pan,leaving it so for 1-2 minutes,so that the mozzarella will melt without making too much mess.You may choose latteria instead if you have guests,the webs that mozzarella produces in the plate may be awkard to eat for someone ;)
Uncover,serve and add some grated parmesan if you fancy.

I Piccadilly sono il top assoluto per questa ricetta,i ciliegini vanno anche bene ma sono un pò meno "morbidi"come gusto,se volete potete fare anche questa ricetta con i pomodori tipo San Marzano,ma potreste volerli pelare prima per non avere troppe bucce nel piatto...personalmente non mi danno fastidio e le lascio :) se fossero un pò acidini,aggiungete una punta di zucchero!

I am sorry if speaking of piccadilly tomatoes or latteria leaves you pointless,i have seriously no idea of which tomatoes or cheese you may use in your country to substitute them...guess you can try any not-aged ,simple cheese and sweet, tiny tomatoes you can find in your town...and see how it goes!!!

Cherry lemonade/limonata alla ciliegia

When i was in the US,i drank a delicious,refreshing drink they called cherry lemonade,or cherry limeade when made with limes.I don't know if this is the "original" recipe, but worked well for me ;)
Squeeze a lemon in a large glass,add cherry drink syrup(1 size of lemon,half size of syrup),mix well,add lots of ice and fill the glass with cold water.You may wanna use only half lemon and syrup in proportion,especially if the glass is not so big,or use less lemon,more syrup...some like it sweeter,some sourer...it is very good anyway!

Quand'ero negli Stati Uniti,ho bevuto una deliziosa bibita rinfrescante,chiamata Cherry lemonade o Cherry limeade se fatta con i lime.Non so se questa è la ricetta "originale" ,ma per me funziona!
Spremi un limone in un grande bicchiere,aggiungi sciroppo per bibite alla ciliegia(1 dose di succo,metà dose di sciroppo),mescola,aggiungi un bel pò di ghiaccio e riempi il bicchiere con acqua fredda.Potresti voler variare le dosi,usando solo mezzo limone o + sciroppo...dipende se piace + dolce o + acida...buonissima comunque!!!

Bavarese alla fragola - Strawberry bavarian

Ingredienti:
500 g fragole mature
200g zucchero
5 fogli colla di pesce
succo di 1 limone
1/2 L panna liquida fresca

Lavare le fragole,asciugarle,togliere i piccioli.Passarle al setaccio sottile con l'aiuto di un cucchiaio(se non riesci frullale).
Unire a questo passato il succo del limone,lo zucchero e la colla di pesce che prima avremo ammorbidito in acqua fredda,strizzato e sciolto a fiamma bassa in un padellino preferibilmente antiaderente.
Mescolare con cura per incorporare la colla di pesce,che dovrà essere  a temperatura ambiente quando la uniamo alle fragole:+ calda cuocerebbe la frutta,troppo fredda farebbe dei grumi,o meglio dei filamenti.
A parte montare la panna a neve,e incorporarla con cura al composto,facendo attenzione a non smontarla.Meglio di tutto usare un cucchiaio che faremo scendere lungo le pareti della ciotola in verticale,per poi risalire centralmente con la parte convessa verso l'alto.
Versare la mousse in coppette individuali e mettere in frigo per almeno 4 ore prima di servire.Se si vuole fare uno stampo unico,lasciare in frigo almeno una notte.Se le fragole sono particolarmente dolci,si può ridurre lo zucchero :)


Ingredients:
500 grams ripe strawberries
200g sugar
5 sheets of isinglass(in Italy they sell it in sheets,you might want to check your country's equivalent gelling power to adjust the quantity needed)
the juice of 1 lemon
1/2 liter fresh cream.

Wash the strawberries,take away the petioles,pass them through a sieve with the help of a spoon.If they're too hard to do so,just use the blender.
Add the lemon juice,sugar and the isinglass or whatever you're using in its place(just assure it is tasteless as isinglass is).Isinglass must be softened in cold water,squeezed to eliminate most part of the water and then melted in a non-stick pan, over very low fire.
Blend accurately to mix the isinglass:it must be at room temperature,too hot it will cook the fruit,too cold it will harden in unpleasent filaments/clots
Whip cream in another bowl,add it evenly to the mix,being careful not to unwhip it all.My advice is to use a spoon,sink it vertically along the bowl side,and then rise it up in the centre,with the convex side up.
Pour the bavarian in single cups and put in the fridge for at least 4 hours prior to serving.If you want to have it in a single mold,a night in the fridge is needed.You can reduce a bit the sugar if the strawberries are very sweet :)
