La crema di zucchine di "Cucina precaria" - "Kitchen precarious" zucchini cream


Buongiorno a tutti!
Volevo segnalarvi oggi un'ottima ricetta che ho trovato sul sito "Cucina Precaria":la crema di zucchine profumata al basilico e menta con yogurt greco. 
Io ho apportato delle modifiche:ho evitato di mettere la menta,abbondando invece col basilico,perchè il mio ometto è un pò una fisima e temevo non me la assaggiasse nemmeno,con la menta,e poi visto che non avevo lo yogurt greco a casa ci ho messo piuttosto una cucchiaiata di Philadelphia.All'inizio della ricetta,quando dicono di far bollire il brodo a parte e POI aggiungerlo alle verdure,sappiate che io non l'ho fatto(perchè sono pigra e non volevo sporcare un altro pentolino),ho messo acqua e dado direttamente nella pentola ed è venuta buonissima lo stesso!!!!

Hi everybody!

I avoided the mint,addin' more basil,because my man is a bit picky and i feared he wouldn't taste it,with the mint,and since i didn't have any greek yogurt at home,i used a spoonful of Philadelphia cheese.At the beginning of the recipe,they say to boil the water and the stock cube  separately,and then add it to the zucchini pot,but i'm lazy and didn't want to use another pot,so i added water and the stock cube straight in the zucchini pan,it came out perfect anyways!!!!

Muffins leggeri alla banana - Light banana muffins


Ingredienti:
200 gr di farina,1 banana,1 limone non trattato,50g di olio di riso(o arachidi),40g di zucchero,1 uovo,1/2 bicchiere di latte,mezza bustina di lievito vanigliato in polvere(8 gr)un pizzico di sale.

Lavate il limone,asciugatelo e grattuggiate metà della scorza.Sbucciate la banana,tagliatela a dadini e mescolatela col succo di mezzo limone.

Riunite nel mixer lo zucchero con l'olio e la scorza di limone grattuggiata,attivate l'apparecchio per qualche secondo,unite l'uovo,la farina setacciata con il lievito,il latte e il pizzico di sale,frullate finchè il composto è omogeneo.

Unite la banana,sgocciolandola dal succo di limone,mescolate il composto con un cucchiaio e suddividetelo in 8 stampini,cuocete in forno preriscaldato a 180° per una ventina di minuti.Fate la prova stecchino e se non sono cotti proseguite la cottura per altri 5/6 minuti.Io volevo farli a forma di cuore,ma dopo la lievitazione mi sono venuti come li vedete nella foto,un pò sbirignaccoli.Però erano buonissimi!Al posto della banana (o assieme ad essa ;) )potete mettere delle gocce di cioccolato o un pò di frutta secca sbriciolata.

Ingredients:200 grams flour, 1 banana, 1 organic lemon,50 grams rice oil(i used peanuts oil),40 grams sugar,1 egg, half glass of milk, 8 grams of vanilla yeast,a pinch of salt.

Wash and dry the lemon,grate half of the zest;peel the banana,mix it with the juice of half lemon.
Put in the mixer sugar,oil and grated zest,mix a bit,add egg,flour sifted with the yeast,milk and salt,mix all until even.

Add the banana,lifting it from the lemon juice,mix with a spoon and divide the mix in 8 individual molds;cook in pre-heated oven (180° celsius degrees)for 20 minutes,check if they're done with a toothpick,i f they're not keep cookin' them for 5/6 more minutes.Mine meant to be heart-shaped,but as they rose the heart shape went bye-bye ^^ They were very good though!Instead(or together with) banana you can use chocolate drops or small pieces of nuts.

Primo esperimento di Nutella vegana - the vegan Nutella experiment


Sono sempre stata un'amante della Nutella,e della cioccolata in genere(e si vede...),ma anno dopo anno,la ricetta della crema spalmabile con la quale sono cresciuta è peggiorata tantissimo,per mantenere bassi i costi hanno tagliato le nocciole(ridotte ad un misero 12%)e aggiunto dei grassi pessimi ma economici,come l'olio di cocco ad esempio.L'alternativa commerciale è la crema Novi,di ottima qualità:i grassi derivano unicamente dalle nocciole presenti nell'impasto,ed il gusto è paradisiaco.Unico neo costa un patrimonio(mi pare 3,5€ per un vasettino bi-porzione o poco via...),così mi sono detta:spesa per spesa,perchè non provare a farla in casa e avere un prodotto + sano e + buono?

I've always been a fan of Nutella and chocolate in general(and it shows....),but year after year,the recipe of the spreadable cream i've grown up with has gotten worse and worse,to lower the costs they gave up on most of the hazelnuts(only 12%left),and added cheap,bad oils like the coconut one.In italy they sell the Novi spreadable cream,whose taste is heavenly but the price is not :( i thought that,dear for dear,i might give it a shot and try handmaking it at home,for a healtier and gooder result!

Ho cercato una ricetta vegana per un discorso,oltre che di salute,di conservabilità:le ricette "normali"includevano del latte,il che faceva sì che durasse pochi giorni in frigo;volevo invece qualcosa che potessi farmi che so,una volta al mese e si conservasse bene.Ho preferito conservarla comunque in frigo,anche perchè l'ho provata quest'estate e faceva caldo,ma la dose per i prossimi 1-2 giorni la tenevo fuori,perchè fosse + spalmabile,ed andava bene!

I looked for a vegan recipe,it is not only healtier,but also easier to keep for more days without preservatives;"normal" recipes usually include milk,which will last few days in the fridge,while this recipe can be kept for weeks without ruining itself.Keep it in the fridge just to be sure if the weather is hot,but you can also keep the dose for the next 1-2 days outside of the fridge,it will be easier to spread and gooder ;)

La ricetta me la sono dovuta reinventare di sana pianta, dopo che ho scoperto che io avevo le nocciole sgusciate e le dosi erano per le nocciole col guscio(...),e ho fatto altri massicci aggiustamenti a olio e zucchero,penso di poterla migliorare ancora,ma già stavolta il risultato era molto buono!Ecco le dosi:

140 grammi di nocciole sgusciate(senza pellicina,che darebbe un gusto amarissimo)
40 gr cacao in polvere
80 gr zucchero di canna
6 cucchiai di olio di arachidi(anche semi di girasole va bene)

I had to totally re-invent the recipe,after i've discovered they were talking about hazelnuts with shell,while i had the naked ones(...),and made massive adjustements on oil and sugar.I think it can be furtherly improved,but it was very good already!!!!Here are the doses:

140 grams peeled hazelnuts(without the brown skin which is bitter and would ruin the recipe)
40 gr cocoa powder 
80 grams sugar cane
6 spoons of peanut oil(sunflower seeds oil can be used,too)

Macinate finissimamente le nocciole in un piccolo tritatutto,magari facendo delle pause ogni tot secondi per non scaldarle troppo;aggiungete il cacao e lo zucchero e macinate ancora un pò;aggiungete l'olio,potete variare la dose di quest'ultimo se la volete + o meno densa...
Penso si possano aggiungere(meglio ad inizio macinatura)anche un pò di semi di vaniglia,prossima volta ci provo!La crema che otterrete così viene abbastanza "rustica",dà il meglio di se secondo me sulle fette biscottate integrali o su delle fette di pane ben tostato.Ha un gusto abbastanza "fondente",vi piacerà se come me amate la cioccolata scura!!!

Grind the hazelnuts making pauses now and then,so you won't warm them too much.When they're a very thin flour,add cocoa powder,sugar and grind a bit more.Add the oil for last,you can put a bit more or less of it,if you want it thicker or softer.I think you can also add a bit of vanilla seeds,better in the first grinding phase,but i haven't tried it this time.The cream you'll obtain with this recipe is rather "rustic",i think it is better tasted on a well-toasted bread or on whole wheat rusk.You'll love it if you like dark chocolate!Its taste is more like that than like traditional Nutella.

Progetto di rifare questa ricetta,ma ne ho trovata anche un altra col miele al posto dello zucchero...fatemi sapere intanto se avete provato a farla,e come vi è venuta!!!!

I plan on re-making this one,but i also found another one with honey instead of sugar...in the meanwhile let me know if you've tried this one,and how it came out ;)

Cherry lemonade/limonata alla ciliegia

When i was in the US,i drank a delicious,refreshing drink they called cherry lemonade,or cherry limeade when made with limes.I don't know if this is the "original" recipe, but worked well for me ;)
Squeeze a lemon in a large glass,add cherry drink syrup(1 size of lemon,half size of syrup),mix well,add lots of ice and fill the glass with cold water.You may wanna use only half lemon and syrup in proportion,especially if the glass is not so big,or use less lemon,more syrup...some like it sweeter,some sourer...it is very good anyway!

Quand'ero negli Stati Uniti,ho bevuto una deliziosa bibita rinfrescante,chiamata Cherry lemonade o Cherry limeade se fatta con i lime.Non so se questa è la ricetta "originale" ,ma per me funziona!
Spremi un limone in un grande bicchiere,aggiungi sciroppo per bibite alla ciliegia(1 dose di succo,metà dose di sciroppo),mescola,aggiungi un bel pò di ghiaccio e riempi il bicchiere con acqua fredda.Potresti voler variare le dosi,usando solo mezzo limone o + sciroppo...dipende se piace + dolce o + acida...buonissima comunque!!!
